Ingredients


  • 1 1/3 cup(s) all purpose flour
  • 3 Tbsp. sugar
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 1/4 cup(s) buttermilk
  • 2 large eggs, cage free
  • 2+ Tbsp. unsalted butter
  • 2 cup(s) fresh blueberries
  • syrup

Method

To make batter:

  • Whisk together flour, sugar, baking powder and salt in large bowl.
  • In another bowl, whisk buttermilk, eggs, and 2 tablespoons butter.
  • Stir wet ingredients into dry ingredients.
  • Gently fold in berries.


To make pancakes:

  • Heat a large nonstick griddle or skillet over medium heat; brush with butter. Drop batter by 1/3 cupfuls onto griddle. Cook pancakes until brown, brushing griddle with more butter as needed, about 3 minutes per side.
  • Serve pancakes with your favorite syrup.


Yields about 10 - 12 pancakes
