

Buttermilk Blueberry Pancakes

Ingredients
- 1 1/3 cup(s) all purpose flour
- 3 Tbsp. sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 1/4 cup(s) buttermilk
- 2 large eggs, cage free
- 2+ Tbsp. unsalted butter
- 2 cup(s) fresh blueberries
- syrup
Method
To make batter:
- Whisk together flour, sugar, baking powder and salt in large bowl.
- In another bowl, whisk buttermilk, eggs, and 2 tablespoons butter.
- Stir wet ingredients into dry ingredients.
- Gently fold in berries.
To make pancakes:
- Heat a large nonstick griddle or skillet over medium heat; brush with butter. Drop batter by 1/3 cupfuls onto griddle. Cook pancakes until brown, brushing griddle with more butter as needed, about 3 minutes per side.
- Serve pancakes with your favorite syrup.
Yields about 10 - 12 pancakes
