Fancy Orange Mousse

It takes a lot of work to serve this in oranges, but if you're looking to do something fancy for a special occasion, it's a lovely touch.

Ingredients


  • 6+ nice looking oranges *
  • 3 1/2 cups 1% milk **
  • 3 large eggs
  • 3 egg whites
  • 1 cup sugar
  • 2/3 cup cornstarch
  • 1/2 cup fresh orange juice
  • 1 Tbsp. zest of orange
  • 1 Tbsp. butter
  • 4 tsp. pure vanilla extract
  • 2 cups semi-thawed frozen whipped topping
  • mint sprigs (for garnish)

Notes

* will hollow these out and use as serving dish
** or non-fat

Method

  1. In a large saucepan, heat milk over medium heat until bubbles form around the edge of the pan (do not boil). Add butter, allow it to melt.
  2. Meanwhile, in a bowl using an electric mixer at high speed, beat eggs, egg whites, sugar & cornstarch until very light and fluffy, about 3 minutes. Mix in orange juice and orange zest.
  3. Beat in 1 cup of the hot milk into the egg mixture.
  4. Slowly whisk the egg mixture into the hot milk.
  5. Bring mousse to a boil whisking the entire time until the mixture is thick, about 2 minutes. Remove from heat and stir in the vanilla.
  6. Pour mousse into a bowl, cover and put in fridge until cold, about 2 hours.
  7. Right when you're ready to serve the dessert, remove from fridge, fold in whipped topping, place in serving dishes (using your hollowed out oranges or even large goblets look nice) and garnish with a mint sprig.
