Victoria's Awesome Carmel Corn with a Secret

Be careful...you won't be able to have just one handful.
- 1 cup(s) butter *
- 2 cup(s) brown sugar
- 10 Tbsp. corn syrup **
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 tsp. vanilla extract
- 5 quarts popped popcorn
- some sea salt
Notes* or margarine
** (1/2 cup and 2 tbsp.)
1. Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
2. In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat all popcorn evenly.
3. Place non-stick aluminum foil in two large shallow baking dishes. Distribute caramel corn evenly on the two baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour.
*Now here's the secret part ~~ when baking the corn ~~ at the 30 minute point of baking, lightly sprinkle a scant 1/4 teaspoon of sea salt over the top. Make sure you stir the corn well so the salt is distributed well throughout the corn, then continue to bake for the last half hour. Stir one more time at the end of baking time.
4. Remove from oven and let cool completely before breaking into pieces.
