

Chicken Salad Sandwiches

I love to do these for parties and use sweet hawaiian bread for a contrast in taste. You could also add dried cranberries and sliced grapes to sweeten it up a bit.
Ingredients
- 1 12.5 oz shredded cooked chicken, canned *
- 1/4 cup chopped celery **
- 1/4 cup(s) chopped onion ***
- 1/4 cup(s) mayonnaise
- 1 package halved Hawaiian sweet rolls
Notes
* I like Valley Fresh White Chicken in Water with Sea Salt** 1 stalk

Method
Mix all ingredients well, except bread. You can also add salt and pepper to your taste. Refrigerate mixture for at least 1 hour for best flavor. Spread chicken mixture on bottom half of bread. Top with remaining bread.

This was an instant hit at my house. Hubby doesn't like his chicken salad made with nuts and fruit, so this was perfect and so easy to make.
