

Ren's Football Nachos

You can customize each person's nacho needs by using individual pie tins and it makes clean up soooooo much easier.
Ingredients
- pie tins
- 1 bag tortilla chips
- 3/4 lb. ground beef 85/15
- some chili powder
- 1 can refried beans
- 1 can sliced olives
- some jalapenos, jarred
- 1/4 cup chopped green onion
- 1/4 cup chopped sweet onion
- optional tomato, vine-ripened
- optional cilantro
- 1+ cup(s) shredded cheddar cheese
- some sour cream, light
- some Pace Picante Sauce - medium
Method
- Arrange a generous layer of chips on a pie tin
- Dollop on some warmed refried beans and do the same with some cooked ground beef (brown ground beef with generous sprinkling of chili powder, drain excess moisture if applicable)
- Now add sliced olives, jalapeno slices, chopped onion (I like to use a combo of green and sweet onion), and optional: chopped tomato and/or cilantro
- Top with shredded cheese
- Bake at 350 for 10 minutes (or until cheese and/or tips of chips start to brown)
- Serve immediately with side of sour cream and salsa

A perfect appetizer recipe for the gang during any sporting event. I saved this to my menu planner and it will be used often.

VERY clever with the pie tins. I hate scraping cooked cheese off of plates. Plus, I have a few friends who love fresh tomatoes and few friends who hate fresh tomatoes, so now I can make their naughty nacho plates custom just for them. ;-)

This IS the best nacho recipe. Nothing beats having a cold one and a plate load of these bad-boys delivered to the coffee table right before the afternoon game starts!
