Banana & Coconut Parfait

Ingredients


  • 1/2 cup sweetened shredded coconut
  • 2 bananas
  • 1 lime
  • 1 pint(s) mango sorbet *

Notes

* you can use another favorite tropical sorbet flavor

Method

  1. Preheat oven to 375 degrees. Spread coconut on a baking sheet and bake until toasty brown, 3-5 minutes. Watch carefully because the coconut can burn quickly.
  2. Peel, then cut bananas into 1/4 in. slices and put slices in a bowl. Finely shred zest from the lime over the banana slices. Juice the lime and toss juice with banana slices.
  3. Divide 1/2 of the banana slices among 4 parfait glasses/small glass bowls, lifting bananas out of the lime juice with a fork or slotted spoon. Top bananas in each glass with 1/4 cup sorbet and sprinkle with 1 Tbsp. coconut. Repeat to make a second layer in each parfait. Serve now.

I love this and do this as a side in the morning for breakfast.

Even my picky 4 year old thought this dessert was tasty, but my main point in this review would be to say, "Wow! Here is something new and unique and really refreshing after the spicy meal I had for dinner". I give this EASY to make dessert an A+.
