Tomato Basil Soup

This soup is excellent with a sandwich or with a pasta salad and it is so easy to make and delicious.
- 1 14.5 oz can undrained Italian-style stewed tomatoes
- 1 14 oz chicken stock *
- 1 tsp. sugar
- 2 Tbsp. chopped fresh basil
- 1 Tbsp. extra virgin olive oil
Notes* can substitute chicken broth or vegetarian broth
Place tomatoes, chicken stock, sugar, basil, and olive oil in a blender. Puree until smooth. Transfer pureed mixture to a saucepan to heat.
