Fresh Vegetable and Tortelloni Pasta Salad

This pasta salad is great for a light lunch or dinner. I serve it with Tomato and Basil Soup and/or with fresh fruit.

Ingredients


  • 1 9 oz. package fresh rainbow five cheese tortelloni *
  • 2 cup(s) sliced 1 inch asparagus **
  • 2 tsp. olive oil
  • 2 garlic cloves
  • 1 8 oz. package fresh spinach ***
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 2 tsp. lemon juice, fresh
  • 3 Tbsp. parmesan, shredded, fresh
  • 3 Tbsp. pine nuts ****

Notes

* can substitute your favorite pasta
** about 1/2 pound
*** can always use more spinach
**** can use raw or toasted

Method

Prepare tortelloni according to package directions. Add asparagus during last 3 minutes of cooking. Drain pasta and asparagus and rinse with cold water. While pasta is cooking, heat oil in a large nonstick skillet over medium heat. Add garlic and saute 1 minute. Add spinach, salt, and pepper. Cook 2 minutes or until spinach wilts. Combine pasta mixture and spinach mixture in a large bowl. Add lemon juice and toss evenly. Top servings with cheese and nuts. Yield: 3 servings.
