

Chicken Sausage with Polenta and Peppers

Ingredients
- 1 pkg. sliced sun dried tomato chicken sausage links
- 1 sliced bell pepper, red
- 1 sliced bell pepper, orange
- 1 tsp. minced garlic
- 1 sliced onion
- 1 can canned tomatoes, diced
- 5 leaves chopped fresh basil leaves *
- 1 pkg. sliced polenta, tube
- 1/4 cup Parmesan
Notes
* or use 1 tsp driedMethod
Cook peppers, onions, and garlic with sausage in a large skillet. Add basil and canned tomatoes. Simmer into most of juice is gone. Meanwhile, slice polenta into half inch slices and place on cookie sheet coated with cooking spray. Bake at 350 for 10-12 minutes on each side. Serve sausage and vegetables over slices of polenta. Sprinkle with parmesan.
