Mushroom and Zucchini Orzo

I usually serve this dish with my Kalamata-Balsamic Chicken with Feta cheese, but it is just as tasty as a vegetarian side dish.
- 1 Tbsp. olive oil
- 1 cup(s) uncooked orzo pasta
- 1 cup(s) sliced mushrooms, fresh
- 1 cup(s) diced zucchini
- 1 Tbsp. butter
- 1/2 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
Cook orzo according to package directions. Drain and keep warm. While orzo cooks, heat a large non-stick skillet over medium high heat. Coat pan with olive oil. Add mushrooms and zucchini; saute 6 minutes or until tender and browned. Combine orzo, mushroom mixture, and remaining ingredients in a large bowl and toss. Yields 4 servings (serving size 3/4 cup).
