Nothing is better than coming home and having your dinner practically waiting for you! This chicken could also be used on nachos, in tacos, or in some sort of Mexican casserole. It is moist and delicious and literally falls apart in the crock pot.
AMAZING! This easy yet tastey dish had my whole family including the 2 little boys coming back for 2nds. Even the store brand salsa tastes soooo good with this recipe.

Easy to make and the kids loved it!
This was so easy to prepare and turned out awesome! We were able to make lunches the next day, as well as put some aside to throw into enchiladas this week! Such a great recipe that I will absolutely make again! And I can't wait to play around with the ingredients! Thank you!
This recipe is wonderful! I cooked it the first time on a family vacation and now it's one of our family's favorite meals. Te nice thing about this recipe is that if there is leftovers you can use for burritos or enchiladas the next day!

Awesome easy meal! I made my own taco seasoning and didn't have onion powder so I chopped up some onion and threw it in, as well, but very easy and very tasty! A hit with the family!

This recipe is AWESOME!!! I used chicken tenderloins (chicken breasts that have been sliced into smaller pieces), the whole can of corn instead of one cup and added a whole can of black beans (drained). Per the recipe, I used one cup of mild salsa and saved the little bit that was left in the jar for topping the quesadillas. To give it a little kick, I used hot taco seasoning. Served this with whole wheat tortillas, leftover salsa, and sour cream. Will definitely make this again!

Delicious and so easy. We saved the leftovers to make chicken nachos for lunch.
Very good!! I will add onions to it next time, but my husband, kiddos and I loved it. I'd say this feeds 4 people...we didn't have any leftovers. Will def be making again!

Dissappointed. I followed the recipe to a t and there wasn't much flavor to it.
The salsa disintegrates before the chicken is even done cooking in the crockpot too so I would recommend waiting until the chicken is either cooked or almost cooked before adding the salsa. That way you can drain any excess chicken grease too.

My family really liked this recipe. We added a can of black beans and when we had left overs we turned it into enchilada soup with rice. Very very yummy!!
This was DELICIOUS! Made exactly like the recipe instructed. The chicken just fell apart so I didn't even really need to shred it. My husband said this was the best recipe I have ever tried and he had a second helping. Both of my kids enjoyed it too! Will definitely be adding this to the monthly menu.

So good and super easy to make. Everyone loved it. I added 1 can of black beans right at the end and instead of making them into quesadillas we made soft tacos so everyone could add their own cheese, guacamole and sour cream. Will be making them again.
The whole family really enjoyed this dish, was very tasty and easy for a week night when everyone's at school and work.

This was a tasty recipe. I loved being able to throw in frozen chicken, though I used more than the recipe called for so I adjusted the rest of the ingredients accordingly. My husband, who can be notoriously critical of new recipes, told me I could make this for him any time. It fed the two of us from Friday dinner through Monday dinner - and tasted fantastic with Multi-grain tortillas!

All in my house loved it! I added 1 can of black beans and also a packet of Ranch seasoning mix with the taco seasoning! Came out great! I even made a bunch extra and froze them for snacks for later! Enjoy!!

Absolutely amazing and sooo easy! What I loved about this recipe was that I threw in rock solid frozen chicken breasts and all of the other ingredients in the morning, then came home after work to a meal almost entirely complete! At that point, I shredded the chicken and let it cook for another hour. Making the actual quesadilla took about 3 minutes. So my prep time for this was about 7-10 minutes and they were outstanding!I wanted to make a lot, so I used two pounds of chicken, then I made enchiladas two days later. I actually had enough left over to make another batch of Quesadilla's on another night. This recipe proved very flavorful and economical. It is definitely one of my favorites. BTW- if you don't have pre-packaged taco seasoning, you can use cumin, chili powder and garlic powder and it will taste great.
Easy and great! I did add about 1 cup of water at the beginning of the recipe since my slow cooker cooks hot. I was left with a nice sauce for the quesadillas plus extra sauce to make Taco Soup. I added 1/4 of a red onion, 1/2 sliced green pepper, and 1 cup pre-cooked black beans at the beginning of the cook time. Loved it! The chicken was extremely tender-even my picky 1 year old enjoyed the chicken. That's a miracle!

I cooked the recipe as posted except without the taco seasoning on high for 3-4 hours, then added 1 can of black beans, 1 cup of brown jasmine rice, and 1 teaspoon of salt. I continued to cook on high for 1 hour. Delicious!

This is an awesome dish that my family loved. It was quick and easy made it with some microwaveable rice and had a great dinner. The most exciting part my daughter loved it and she doesn't love anything!!

It was delish!! Even the little people liked it! And the best part was that it was SoOooooOooO easy, throw it in a crock pot and forget about it! Will for sure make it's way into the rotation at our house!!

I will never make any other type of filling again! This stuff is amazing! We stuff tortillas with it, use it as nacho topping, we've even made it enchilada-style...yum yum yum!

First recipe from this site that I've tried.....We loved it!!! So EASY and tasty! I used fresh chicken, so it didnt have to cook so long, but I'm glad to know that if I'm ever the position to have to use frozen, it will be fine!! The chicken was so tender that it easily pulled apart with forks. So good....going to "Put it in the rotation" as my husband says. Thanks a bunch for this recipe!

I forgot to take the chicken out of the freezer, but, the whole thing came out so yummy! With a family of 5, some of us had the quesadilla and some just ate it rolled up in a burrito and everyone loved it! They keep begging for me to make it again!

LOVE this recipe. Chicken easily pulls apart with forks after being in slow cooker. Tastes like restaurant style quesadillas. Don't forget some sour cream on the side!
My family LOVED this chicken quesadilla recipe!! It was so easy that with just a few instructions from me, my husband was able to get it going in the crock pot!! I will definitely be making this again!! Thank you!

Wonderful! There are two grown and two-half grown men in my house, so I increased all the quantities (unmeasured), and used frozen corn. I cooked it on high for about three hours, then added a couple cups grated sharp cheddar, and crumbled in about half a big bag of tortilla chips (instead of using the mexi-cheese and tortillas). Then I cooked it on low for another hour? Served with sour cream, more salsa, more chips, shredded lettuce, chopped tomatoes, and black olives. Yum!!!
