

Chicken Tacos

Ingredients
- 1 pkg. corn tortillas
- 1/4 cup chopped onion
- chopped cilantro
- 4 skinless, boneless chicken thighs
- 1 juiced lime
- 1/2 tsp. salt
- dash paprika
- dash cayenne pepper
- dash chili powder
Method
- Combine all of the ingredients in a Ziploc bag and let the chicken marinate in the refrigerator for 30+ minutes.
- Lightly coat grill with olive oil and grill at medium-high heat. Cook the marinated chicken thighs for about 5 minutes on each side. Remove the thighs and cut them into strips. Place the thigh in a lightly oiled pan on medium heat with the remaining marinade. Cook the chicken until it is done and the liquid has fully evaporated.
- Place several strips of chicken down the center of a corn tortilla. Sprinkle chopped onion and cilantro over the chicken. Drizzle each taco with salsa verde.

5 stars for taste, freshness, and ease of preparation! I was amazed at how full of flavor this dish was with only using a few quick ingredients. I may try doing this in a different way, too -- just prepare the chicken, add some extra lime juice on top, and serve with some steamed rice. This is great!

I had one of those moments last night when I was home with the kids and all settled in that I lost my urge to want to have a big production in the kitchen, but I remembered how my planned recipe (this Chicken Tacos recipe!) didn't seem too complicated, so I persevered.
And it was a good thing I did, because I just discovered a new recipe that will now become one of my favorites! VERY EASY to make (I didn't get on the grill, but I did bake everything which was tasty still) and so full of flavor. I wound up having some extra chicken and just ate that alone with more squeeze of lime. YUM!
