

Chicken and Dumplings

This is my favorite recipe thus far...and I've tried a ton of recipes. It is the closest to my grandma's recipe I can find.

Ingredients
- 1 whole cooked chicken, cooked (3-4 pounds)
- 4 chopped celery stalks
- 1 medium chopped carrot
- 1 small sliced onion
- 2 sprigs chopped parsley
- 1/8 tsp. pepper
- 2 1/2 cup(s) Bisquick mix
- 2/3 cup(s) milk
- 4 cup(s) chicken broth
- optional can(s) peas
- optional some cubed potatoes
Method
- Place celery, carrots, onion, parsley, pepper and chicken broth in a dutch oven or large pot.
- Cover and heat to a boiling, reduce heat. Simmer until vegetables are soft, about 15 minutes.
- Remove vegetables from broth, and remove 1/2 the liquid broth. Reserve vegetables and broth.
- Stir in 1/2 cup of Bisquick mix into the broth...be sure to temper so it doesn't cook into little pellets. This will thicken the broth into a creamy gravy.
- Boil 1 minute, then return remaining broth and vegetables and chicken to pot.
- Mix remaining Bisquick mix and milk together to make a sft dough. drop by teaspoon fulls into bubbly liquid. Cook uncovered for 10 minutes.
- Cove and cook 10 more minutes.

This recipe was very tasty. I'm not good at doctoring foods, but those who are could easily make this a Sunday family favorite. Next time I will use a little more broth.
