

Lamb Chops with Cherry Sauce

Ingredients
- 1/3 cup(s) chopped onion
- 1/4 cup(s) dry red wine
- 1/4 cup(s) chicken broth
- 1/3 cup(s) dried sour cherries
- 1 lemon for zest
- 1 tsp. brown sugar
- 1 tsp. balsamic vinegar
- salt and pepper
- lamb chops
- 1 Tbsp. olive oil
Method
- To make the sauce: In saucepan over low-med heat, brown onion, add wine and broth, then add cherries, lemon zest, brown sugar, balsamic vinegar, and salt and pepper. Stir to dissolve sugar and mix ingredients.
- Season lamb chops with salt and pepper. Heat olive oil in pan. Add lamb chops and cook to desired doneness, about 5 min on each side.
- Pour sauce over the chops, and serve.
