

Crispy Southwest Chicken Wraps

Ingredients
- 1 cup(s) cooked rice
- 1 cup(s) cooked & shredded, chicken
- 1 can(s) black beans
- 1 sliced green onion
- 1/2 diced green pepper *
- 1/4 cup(s) chopped cilantro
- 1 juiced lime
- 1/2 Tbsp. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. garlics salt
- 1 cup(s) shredded Monterey jack cheese
- 1 cup(s) shredded sharp cheddar cheese
- sour cream (optional)
- tortillas
Notes

- Mix rice together with chili powder, cumin and garlic salt. Add remaining ingredients except for cheese and sour cream.
- Sprinkle cheese over tortillas, leaving 1/2-inch border around edges, then arrange chicken and rice mixture down the center of each tortilla. (Optional: on some of the wraps, I dotted the cheese with about 1-2 tablespoons of reduced fat sour cream before arranging chicken and rice mixture down the center - it made the wraps delightfully creamy.)
- Roll stuffed tortillas, leaving edges open. Spray the tortillas all over with cooking spray.
- Heat a large non-stick skillet (or griddle) over medium heat for 1 minute. Arrange 2 wraps, seam-side down, in pan and cook until golden brown and crisp, about 2-3 minutes per side. Transfer to a plate and repeat with remaining wraps. Serve.

this recipe is pretty good, i personally don't like all of the seasonings and would like more cheese. The recipe is easy to prepare and if you look at the picture, it is prepared with flour tortillas! (duh!) The serving amounts really vary depending on what portion sizes your family eats, and the size of tortillas you use. This recipe is so easy, that if you need more.........make more! I have a family of four (two children under 3) I always double my recipes and freeze what i don't use, with this recipe i had a ton left over(when it was doubled).

My whole family loved this... even the 5 year old... great flavour without being spicy. I'm putting it in our regular rotation. Make sure you buy use the 10 inch tortillas.

My family really enjoyed this dinner. I followed the recipe closely and it was about the perfect amount for my family of 4.

Is this made with flour or corn tortillas? And how many servings can I expect? These things are important when making your grocery list :)
