

Spanish Rice with Chorizo Sausage

Ingredients
- 2 tsp. olive oil
- 1 medium diced onion
- 2 minced garlic cloves
- 1 cup(s) long grain rice
- 1 Tbsp. tomato paste
- 1 tsp. paprika
- 2 cup(s) chicken broth
- 2 thinly sliced chorizo sausage
- 1 thinly sliced red pepper
- 1 thinly sliced yellow pepper
- 1/2 cup(s) green olives, pitted *

Heat a large saucepan over medium heat. Add oil, then onion and garlic. Cook until onion is soft, about 3 minutes. Add rice, tomato paste and paprika. Stir until rice is coated. Add chicken broth, sausage and peppers, then bring mixture to a boil, stirring often. Reduce heat to medium-low. Cover and simmer until liquid is absorbed, about 25 minutes. Serve with olives on the side (optional).
