

Fish Tacos with Sesame-Ginger Slaw

Ingredients
- 1 1/2 lb. tilapia fillets
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. plain low fat Greek yogurt
- 2 Tbsp. lime juice
- 1 Tbsp. dark sesame seed oil
- 1 Tbsp. low sodium soy sauce
- 2 tsp. peeled/grated, fresh ginger
- 1 tsp. honey
- 3 cup(s) shredded coleslaw mix
- 12 warmed 6-inch corn tortillas
Method
Heat a nonstick skillet or grill pan over medium heat. Coat fish with cooking spray; sprinkle with salt and pepper. Add fish to pan; Cook 10-12 minutes, turning once until fish flakes easily with a fork. Combine yogurt and next 5 ingredients (through honey) in a small bowl, stirring with a whisk. Combine dressing and coleslaw mix, tossing to coat. Flake fish into pieces with a fork. Place 2 ounces fish in each tortilla. Top with coleslaw.

This is SO DELICIOUS!!! My kids (3 and 5 yrs) ate and loved it! Both the fish and the slaw. We will definitely make this dish again! ;)
