Omelet Muffins

Makes 8 muffins. Good for veggie and meat leftovers. Adapted from a Paleo Plan recipe.

Ingredients


  • coconut oil *
  • 8 eggs
  • 8 oz diced ham
  • 2 cup diced vegetables, fresh **
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Notes

* to grease muffin cups
** whatever is on hand (asparagus, broccoli, etc)

Method

  1. Preheat oven to 350 degrees F.
  2. Grease 8 muffin cups with coconut oil or line with paper baking cups. Fill any remaining muffin cups with 1 inch of water, so they do not scorch while baking.
  3. Beat the eggs in a medium bowl and add meat, vegetables, salt, ground pepper, and any other ingredients you wish to add. Pour mixture into the muffin cups.
  4. Pour mixture into the muffin cups.
  5. Bake for 18 - 20 minutes.

YUMMY! I'll definitely be making this one again. I used paper liners, but next time I think I'll use ramekins. I put a rounded tablespoon of diced ham in the bottom of each muffin cup topped with a rounded tablespoon of sauted diced sweet peppers and green onions and topped with a rounded tablespoon of extra sharp cheddar cheese. I mixed up each egg individually with a little salt, fresh ground black pepper, and dry mustard and poured over everything in one cup (next time I need to mix the eggs up better).
